The ever-talented Steven explained in his words: At the risk of bugging everyone who's now digging out their lens hoods, I don't think the hood is creating the flare. ;) Without knowing your exact settings, my guess would be that the hood is simply blocking out other ambient light sources from entering into the lens (i.e., from the sides, bounce, etc.), thereby allowing the camera's sensor to better manage the direct sunlight, and refract more evenly.
