But after years of being the only person I know to evangelize the wonders of the pressure cooker, I finally decided to get what my British husband would term "The Dog's Bollocks of Pressure Cookers." This thing automatically brings itself up to pressure, switches gears and starts timing when it reaches the correct pressure, then turns itself down and goes into keep warm mode once the food is done. Not to mention you can put the cheapest cut of meat into this thing and have it emerge as meltingly soft as Kobe beef. Of course, you can do that with a cheap old pressure cooker too, but where's the fun in that. Inaugural meal was veal shanks osso bucco shared with Noeknit and drive-design. We literally destroyed our steam pressure cooker back in Ottawa, so we decided to get a new one in Cuba.
