40/366 - Pie

(8th October 2011) - Saturday's are normally reserved for football, but as it was cancelled today, I took the opportunity to make a chicken and leek pie. I've made this once before and have craved it ever since. It's a Jamie Oliver recipe and it's heavenly. As well as the pie I also baked a Victoria Sponge cake at my mum's request. Now, I'm not the quickest cook at the best of times, but as we had very few of the required ingredients in I ended up having to go to the butchers and then Sainsburys. And then spend pretty much the whole afternoon and early evening in the kitchen. But it was so worth it. I'd corrected the big mistake from last time, which was that there wasn't enough chicken in the pie and also put in slightly less chicken. It really worked! And as I made too much, there was enough left over for another pie, so that's tomorrow's lunch sorted! The same can't be said for the cake though, which was (like usual) scoffed with no leftovers for tomorrow.

I like "drop" dumplings, and I like drop biscuits, and this is the best recipe ever (it makes both), made even better by virtue of only requiring three ingredients. Basically, the recipe is just 4 parts SELF-RISING flour 2 parts buttermilk 1 part vegetable oil For example, 1 cup SELF-RISING flour, 1/2 cup buttermilk, 1/4 cup oil. For this large batch, I use twice that much. For delicious garlic-cheese biscuits, just add garlic powder and shredded cheddar to the dough before baking.
