MEATLOAF with TOMATO RELISH

Makes 2 meatloaves

 

Ingredients:

4 lbs ground beef

1 onion

3-4 cloves garlic

2 cups bread crumbs

¾-1 cup milk

1 cup grated parmesan cheese

2 teaspoons salt

2 teaspoons pepper

1 teaspoon each: dried thyme, dried poultry seasoning, dried oregano, dried basil

½ teaspoon freshly grated nutmeg

4 eggs

3 teaspoons Worchestershire sauce

4 Tablespoons tomato paste

Juice of half a lemon

 

Directions:

Pre-heat oven to 350 degrees.

 

Measure the bread crumbs in a large measuring cup and pour enough milk over to just moisten them. Set aside.

 

Put the beef in a large bowl. Prep and add the following ingredients:  Finely chop the onion. Grate the cheese. Measure the spices: salt, pepper, thyme, poultry seasoning, oregano, basil and nutmeg. Push the garlic through a garlic press. Add the eggs and the Worchestershire sauce, tomato paste and lemon juice. Add the moistened bread crumbs. Squeeze the lemon over all and using your clean hands, gently mix everything together. Don’t over-work it, it will become tough.

 

Once it’s all mixed together, cover lightly and place into refrigerator for 30 minutes.

 

Preheat oven to 350 degrees. Lightly oil two 9x13” baking dishes. Remove beef from refrigerator and form into two loaves about eight inches long, four inches wide and two to three inches tall. Make both loaves the same size. This is important for even cooking.

 

Place loaves into baking dishes and put into oven for about 10-15 minutes. Make the tomato relish topping while the meatloaves bake. (recipe follows below). Coat the tops of each loaf and return to oven for another 25-30 minutes. Allow to rest for 10 minutes before cutting. Serve with creamy mashed potatoes for a hearty meat and potatoes meal. Use the leftovers for sandwiches.
 
TOMATO RELISH

2 Tablespoons butter

1 clove garlic

2 Tablespoons cider vinegar

1 cup brown sugar

1 cup chili sauce

1 teaspoon Dijon mustard

1 teaspoon Worchestershire sauce

Pinch salt

Pinch pepper

2-3 drops Tabasco sauce

 

Melt the butter in a medium sauce pan over low heat. Add the garlic and stir. Add the cider vinegar and brown sugar and stir until the sugar dissolves. Mix all the remaining ingredients together and add to the sauce pan. Heat slowly over low heat and spoon over meatloaf. Can be used on pork or chicken as well. Good cold on meatloaf sandwiches. This is not really a marinade but a sauce on meat after cooking.
