best. burger. ever. I try not to eat too much red meat, so when I do, it has to be worth it. And believe me, this burger is worth every mouthwatering morsel. And quick, and simple. From a recipe found in Ina Garten's "barefoot contessa back to basics" ~ her "Niman Ranch burgers". (I'm not really sure what Niman Ranch beef is, or even where I'd find it in my neck of the woods, but not to fear if you're in the same boat - just choose any 80% lean and 20% fat ground beef). Try it! You'll like it. 2 lbs. ground Niman Ranch beef or other premium beef 1 tbsp. good Dijon mustard 3 tbsp. good olive oil, plus extra for brushing the grill 1 tsp. kosher salt 1 tsp. fresh ground black pepper sandwich size English muffins good mayonnaise (but I just used Hellmann's olive oil based) caramelized onions Mix burger ingredients gently with a fork to combine, taking care not to compress the ingredients. Shape into patties. Grill 4 minutes on medium hot charcoal or gas grill for first side, then flip and grill another 3-4 minutes on other side until medium rare, or a bit longer for more well done. Toast English muffin halves on grill. Spread each half with mayo, lettuce, top with a burger, then with a heaping tablespoon of caramelized onions. Indulge. Caramelized Onions: 2 tbsp. good olive oil 2 tbsp. unsalted butter 2 lbs. yellow onions, peeled and sliced in half rounds 1/2 tsp. fresh thyme leaves 2 tbsp. sherry wine vinegar (I used plain old red wine vinegar) 1 tsp kosher salt 1/2 tsp. fresh ground black pepper Heat olive oil and butter in large shallow pot. Add onions and thyme, tossing to coat. Place lid on top and cook over medium low heat for 10 minutes to sweat the onions. Remove lid and continue to cook over medium low for 25-30 minutes, until onions are caramelized and golden brown. Add vinegar, salt, and pepper, and cook for 2 more minutes to blend flavours, scraping brown bits from bottom of pan. Season to taste. YUM. Tea party birthday cake
This is an 8" round double layer butter yellow cake. It is filled with vanilla buttercream, covered in the same and then wrapped in a fresh layer of pink fondant. There is then an outer layer of violet fondant draped over the top to resemble the tablecloth, after being imprinted with a floral pattern. The table setting was all hand cut and sculpted using gum paste. Violet beads adorn the bottom layer. The perfect little cake for a tea party for a princess turning 4! Happy birthday Lauren!
