Serves 6-8
 
Ingredients
  • 4 eggs
  • 60g (2oz) butter or margarine, softened
  • 1 cup (8oz) sugar
  • 1/2 cup (2oz) self raising flour
  • 1/4 teaspoon salt
  • 2 teaspoons grated lemon rind (you can't put too much of this in to be honest so however many lemons you use, put in all the rind)
  • 1/2 cup (4fl oz) lemon juice (if you roll the lemons on a board before cutting them to juice, you'll get more juice out!)
  • 1 1/2 cups (12fl oz) milk
  • 1 cup (3 oz) desiccated coconut

 

Method

 Preheat the oven to 180 c (350 F gas mark 4)
Place all the ingredients in a large blender or food processor at the one time and blend until well mixed together.
Pour into a well greased 23-25 cm (9-10 in) pie dish and bake for 1 hour (I usually check to make sure it's slightly browned and springy in the middle then I know it's done so may need a little longer depending on your cooker).  Allow to stand for about 10 mins before slicing and serve warm with a scoop of ice-cream (I actually like it just as much cold served with single cream so it's very versatile)
 

Variations
 
Alternative flavours in place of lemon, use 1/2 cup (4oz) of any of the following:
  • crushed pineapple, undrained
  • passionfruit pulp
  • soft mashed bananas
  • orange or mango juice
