Day 88. Dairy Free Quiche. My second recipe post! Just eaten a slice, tastes good! Egg and Bacon Quiche Ingredients 500g pack fresh shortcrust pastry 8 slices of bacon bacon, cut into chunks. 1 onion, peeled and finely chopped 4 medium size eggs, beaten 1/2 cup of sweetcorn 125ml soya milk 2 table spoons of mixed herbs. salt and freshly ground black pepper Method Preheat the oven to 200°C, 400°F, Gas Mark 6. Roll out the pastry on a floured surface until large enough to line a 20cm flan dish. Lay a piece of greaseproof paper in the base of the flan ring/dish, on top of the pastry and fill with baking beans. (I don't have any baking beans so I used a plate!) Bake in the oven for 10 minutes then remove the greaseproof paper and beans and continue to cook for a further 5 minutes. Remove from the oven and leave to cool. While the pastry is cooking, make up the filling. Heat a medium size saucepan or frying pan and cook the bacon pieces until golden and crispy. Remove the bacon and add the onion and cook until softened, then add the sweetcorn and mixed herbs. In a medium size bowl, mix the eggs with the soya milk and seasoning. Stir in the bacon, sweetcorn and onion. Poor into flan dish, sprinkle over dairy free Parmesan. Bake the flan in the oven for 15 - 20 minutes or until the top is just firm. Allow to cool slightly before serving, if serving hot. 365 - 2011 - Day 67
Brisk start to the day today with a 14.54 mile training run! Shame my new running shoes ordered a couple of weeks ago only arrived after this! God bless discount web sites! Also making an appearance today was a Thomas Cook pin celebrating the company's involvement in the 2012 Olympic Games in London that all employees have been given. Anyway, the shoes are nice.....
