Baked cheeses and whatever I could find in the fridge I was clearing out the fridge and found half-emptied containers of cream cheese, tasty cheese, smoked cheese and parmesan. I also found boiled chicken mince in garlic, some frozen spinach and overriped vine tomatoes and red bell pepper. Didn't have the heart to thrown them away so I decided to bake a pasta dish out of them. I sauted the chicken mince with garlic and shallots in olive oil. Threw in some salt, black pepper, oregano and cayenne pepper. Drizzled with worcestershire sauce. (I forgot the wine!) A few minutes in the pan then I transferred the mince to a deep baking dish. Sauted the frozen spinach with diced bell pepper in the same hot pan, then poured it on top of the mince in the baking dish. Covered them with the four cheeses and arranged the still intact vine tomatoes around the dish. Baked it in the oven for half an hour, until the cream cheese turned brownish. The smell was heavenly! Served myself a heap over cooked pasta. It's fried chicken, but it an't 'tukian!
I picked this up off of Cook's Illustrated and have subsequently made it one of my improvisational recipes. I was reminded that, in fact, I hadn't made it in ages by Mrs. Wirehead. The way it works is that you brine, air-dry, sear, and then bake the chicken in such a way that you get really nice tasty skin on the outside but still have it moist on the inside. It takes care, but the results are 100 times better than southern-style fried chicken with the breading. I also made a vermouth sauce to go on top of it.
