Adobo flakes I love chicken frames sold in the supermarket. They cost so much less and they have many uses aside from making chicken stock. Today I cooked adobo flakes out of the carcasses and topped it over garlic fried rice. So yummy! Adobo flakes with fried rice 3 chicken frames, boiled in 3 cups of water until cooked handful of mushrooms, sliced vegetable oil 2 cloves garlic, crushed leftover rice (not freshly cooked) mixed with a pinch of salt spring onion for garnish Marinade: 6 tbsps soy sauce 3 tbsps vinegar ground black pepper salt bay leaf 2 cloves garlic, crushed pinch of sugar 1. Set aside the chicken stock (freeze if you're not going to use it yet). 2. Flake the carcasses. Remove the bones. 3. Mix marinade, flakes and mushrooms in a bowl. Marinate for an hour. 4. Remove flakes and mushrooms from the marinade. 5. Fry the flakes first until crispy. Add the mushrooms and fry for half a minute. Transfer in a bowl. 6. Put garlic in the hot wok with remaining oil and fry until golden brown. 7. Add the marinade and rice. Stir fry for 2 minutes. 8. Serve rice topped with the flakes and garnished with spring onion. Eggs are versatile to use in cooking and definitely, omelettes do not have to be plain and dull. One could whip up a dish using eggs with preferred ingredients and would seldom go wrong :) For an omelette of this size, you need four eggs to be beaten lightly with salt, pepper and pinch of ajinomoto. Next just add in either some tuna flakes, peeled chopped prawns, bacon, ham, leftover cooked chicken or even chopped meat of your choice along with sliced onions [Sauteed before use], chopped tomatoes and bell peppers, lots of spring onions or go solo with long beans, chives or sauteed potatoes alone etc. Pour this mixture in a heated frying pan with oil and cooked on both sides till the eggs mixture is set and golden. And lastly some hot chillies to spice it up if you like! Omelettes are "shiok" when eaten with nasi lemak!
