Spaghetti and garlic chicken with tomatoes Thanks again to the Nintendo DS and ????. Get 200 grams of chicken thigh, six to eight cherry tomatoes (halved), a couple of cloves of garlic (chopped) and spaghetti. Sprinkle a little salt on the chicken and pat it between paper towels. Start the spaghetti. Then, put a bit of oil on a frying pan and put in the chicken, skin side down. Let it cook, covered for about five minutes. Then flip it over and cook another three. Remove from the pan and set aside. Pour any remaining oil/juice into a measuring cup and save it for later. Wipe the pan clean with a paper towel and put in two tablespoons of olive oil. Heat it over a medium flame and add the chopped garlic. Let it brown, and then add the tomatoes. Before you drain the spaghetti, pour water from the spaghetti pot into the aforementioned measuring cup until you have a half cup of liquid. Add that to the pan. Stir it all up a bit, let it simmer, and then turn off the heat. The chicken should have cooled a little, so cut it into bite-sized pieces. Add it and the cooked spaghetti to the frying pan. Turn the heat back on low and stir the whole thing up for a few minutes. Serve garnished with aojiso (green perilla), torn into tiny pieces from which the stems have been removed. Faced with the gruesome truth that I will soon be dying of hunger/poverty, I decided to spit into the wind with an original homemade recipe and see what turned up. Surprisingly, the results were edible and quite good. Let's go shopping: -2 chicken breasts (large) -2 cups tomato sauce (or go right to spaghetti sauce, if you wish) -1 cup steak sauce (I used a bourbon peppercorn joint, but A1 should do you right) -1/2 cup hot cherry peppers (sliced, add some juice if you get them canned/bottled) -3/4 cup fresh mushrooms (sliced) -2 tbsp garlic salt -2 tbsp oregano -1 lb angel hair pasta -Grill the chicken breasts to your desired taste/temperature, I went well done and added some Montreal Chicken Seasoning. -Slice the chicken into bite-sized chunks and combine with tomato sauce, steak sauce, peppers, mushrooms, and seasoning. Bring sauce to a near-boil on high, then reduce to medium-low for 5 minutes, followed by simmering on low for 20-30 minutes, depending on desired thickness. -Prepare pasta according to instructions, for dried/boxed or fresh, and add sauce somewhat conservatively. This recipe doesn't produce a ton of sauce, but it has a very strong flavor to it, and will go a long way, especially with angel hair, and will give you more than enough to cover a standard package of pasta.
