Pea and garlic soup Thu 01/11/2007 20:30 01112007163 Take a head of garlic, slice a little off the top, wrap loosely in foil, with a splash of oil, roast for 50 minutes at gas 6 until soft. Do this the day before, as you'll never make it otherwise, we usually roast it at the weekend and make the soup on Sunday or Monday. Cook some peas, drain squish the garlic into the peas, add some parmesan, some butter and half the stock, pop in the blender and make smooth. In terms of quantity, about 200g of frozen peas 25g butter, two tablespoons cheese and 200ml stock is an accompanying portion for two. It'll be quite thick now, stir in the rest of the stock and then add a bit of double cream, pour it over the back of a spoon to make it sit nicely, eat. Recipe based on one from Nigella Lawson. We usually scale it up to make enough for four people, you can go easier on the butter if you do this. Garlic
This is garlic at the beginning stages of growth where the flowers are just beginning to pop from the buds. These buds are no larger than the size of your pinky fingernail so I am happy with the results. Macro photography may soon be replacing my love of birds.....Nah....could never happen!!!
