Thai Satays... This recipe invites tweaking. Use honey instead of sugar, add or subtract hot peppers... go wild. The dipping sauce is delicious as is, and works wonderfully over noodles. Marinade 1 teaspoon sugar 1 teaspoon salt 1 lb pork or Chicken 2 tablespoons curry powder 1/2 cup coconut milk bamboo skewers Dipping Sauce 3 tablespoons sugar 2-3 tablespoons peanut butter 2 tablespoons fish sauce 1 tablespoon red curry paste 3/4 cup coconut milk Optional: 1 tablespoon of tamarind. Add the coconut milk to a cold sauce pan and start to heat it up at medium heat. As it is heating, stir in the curry paste and break the paste into small pieces. Mix well. When you see red oil simmering to the top, add the peanut butter and the rest of ingredients. Stir and taste. You should be able to taste the fish sauce, sugar and tamarind flavors. If it becomes too thick, add a few teaspoons of water to thin the paste.

INGREDIENTS: 1 3/4 cups balsamic vinaigrette dressing 8 boneless skinless chicken breasts (2 lbs) 12 cups mixed salad greens 4 cups halved fresh strawberries 1 cup honey-roasted peanuts DIRECTIONS: 1. In large resealable food-storage plastic bag, place 1 cup of the dressing and the chicken; turn bag to coat. Refrigerate at least 30 minutes to marinate. 2. Heat gas or charcoal grill for medium heat. 3. Place chicken on grill; discard marinade. Cover grill; reduce heat to low and cook 7 minutes. Turn chicken; cook 7 to 8 minutes longer or until juice of chicken is clear when center of thickest part is cut (170°F). Cut chicken across grain into thin strips. 4. In 7-quart bowl, gently toss chicken, salad greens, strawberries and remaining 3/4 cup dressing. Sprinkle with peanuts.
