Sour Cream Coffee Cake with Cinnamon Chocolate Swirl
I debated making a coffee cake for hours last night until I fell asleep on the couch and woke up at 5am. I was groggy and gave up fighting with myself so I made this Sour Cream Coffee Cake with Cinnamon Chocolate Swirl. I'm glad I did. I did not have enough sour cream for the recipe so I used a combination of sour cream, full fat buttermilk, and some heavy cream to make up for the lower fat content of the buttermilk. The result is stunningly light and tender crumb. All too often, coffee cakes are laden and way too substantial. What surprises me is even though the cake layer is so delicate, it is able to support the thick layer of pecan crumble topping. Almost an engineering feat! A long time in the oven means the pecans are toasted to buttery perfection. Like a classic coffee cake, this one has swirls of cinnamon chocolate in the cake layer. This is a sour cream peach pie topped with a gingered streusel topping. I watched the last bit of the hockey game (green) and bought a piece to the wonderful scorekeeper. This one might go to my boyfriend's company. Directions: pie crust, sour cream based custard with a touch of rum, dieced peaches, crystallized ginger, confectioners' sugar, flour and butter for the topping. This one is done in stages... you can't dump everything in at once.
