"Rosemary has infused the cream with the garden fresh herb that lends a subtle flavor to one of our favorite truffles." Notes: The description is accurate - the rosemary infusion was "subtle." The infusion in this truffle wasn't as strong as I remembered it from before. The rosemary flavor in this truffle was much more "young" than I had anticipated - having a more grassy and floral quality than mature rosemary, which tends to be more heavy, dark, woody and pine-y in flavor. While I like the latter qualities of rosemary with my meats and cooking savory foods, I appreciated Mimi's use of a "younger-tasting" rosemary in the chocolate. In fact, the rosemary was so floral in scent that it tasted as if the truffle had been infused with a hint of lime zest. Again, I think the darkness of the chocolate played a little stronger than the rosemary... I like stronger infusions, so this truffle was a little weak on the rosemary. But, all in all, the infusion was detectable - dancing around in the background - it was "lovely."
Chicken, Roasted Potato & Rosemary Pizza
Brush Boboli thin crust liberally with olive oil. Layer with very thinly sliced red potatoes, and roughly chopped fresh rosemary. Add seasoned shredded chicken and Parmesan cheese. Bake in 350 degree oven for approx. 15 minutes or until lightly golden and potatos are tender. Recipe from a friend, apparently based on a California Pizza Kitchen pizza? It's EASY and very tasty.
