winter comfort food Basic Kichidi (rice and lentil stew) recipe: (good for when you are not feeling well) -heat up a few tablespoons of oil in a pot. --add about 1/2 tsp of black cumin, some cloves, 1 whole cardamon seed, 1 cinnamon stick. Fry. --add 1 small onion or 1/2 of a large onion, diced. Add 1 tbsp of ginger garlic paste. Fry until slightly browned. --add 1.5 cups of rice and 1 cup of moong dal (its green and split in half) --Also add any, some, or none of the following: cilantro, peas, carrots, potatos --fry until slightly browned, at least enough to get rid of some of the raw taste. --add 5 cups of water, keep on high heat until it boils, then reduce to a simmer for 40 minutes. (--I like mine a little mushier, so I continually add more water as its cooking, so it mushes down more.) Serve with clarified butter (ghee), yogurt and freshly fried papads or potato chips. You can also serve it with chicken curry or any other type of curry, hot mix, fried hot peppers, etc. It's like pho, in that everyone likes theirs different. WestAfricanCooking
