COOKING SNAPPER ON BBQ - COOKING OIL COUPON. Cooking Snapper On Bbq
Snapper on the barbecue I got some fresh snapper and sardines from the Queen Victoria Market today, and in such hot weather, it just feels right to cook fish on the barbecue, Malaysian ikan-bakar style! (Ikan = fish, bakar = grill/burn) I grabbed a stalk of lemongrass, 3 cloves of garlic and a small chilli, and whizzed it up in the spice grinder. I deseeded the chilli to avoid overpowering the fresh tasting fish. To the paste, I added about 2 teaspoons each of ground galangal, coriander, cumin and turmeric. Finally, I added salt to taste, and about 2 or 2 tablespoons of oil and a tablespoon of lemon juice to make it a loose paste. This fragrant paste was then slathered on the 700g snapper and each of the sardines, taking care to coat the insides of the cleaned stomach cavity as well. I then grilled the snapper for 8 minutes each side to make the skin and fins nice and crisp! The sardines, being an oily fish, didn't mind the same amout of time :) yum! In hindsight, I could have used a bit more lemongrass and fresh galangal to make it lighter and fresher tasting. View from Joel's deck, Makorori, NZ
Just been in Gisborne, East Coast, NZ for a good friend's wedding, catching up with friends for mussels and snapper cooked on the bbq, with good Kiwi Sauvignon Blanc and the local Gisborne Gold. Magical views such as these were a daily occurance.
