OK, so I tend to cook kind of by the seat of my pants, so that means exact recipes are sometimes hard to nail down with me. I tend to read a recipe and use that as a "guideline." I had peppers and cornmeal that needed using and this is (roughly) what I ended up making - that is, I'm not 100% sure in the numbers here. (And yeah I know the pic isn't all that good. Shooting food is harder than it looks.) Recipe is small because I cook for just me, so feel free to double it for "normal." Jalapeno Cornbread muffins (makes 6 muffins) 5/8 c. cornmeal 3/8 c. flour (basically end up with 1 cup of floury stuff - I like it heavier on the cornmeal side) 1 tbsp. sugar um, some salt, but not too much (1/2 tsp-ish?) 1 tsp. baking powder 1/2 tsp. baking soda 2 jalapenos, finely chopped (I could totally do at least 3 but you'll have to feel out the amount you like over time) 1 egg, beaten 2 tbsp. of oil or melted butter 1/2 c. buttermilk Preheat oven to 400F. Mix the "dry" stuff (cornmeal through jalapenos) in a bowl. Beat the egg and add the oil/butter and buttermilk in a separate bowl. Gradually stir the wet into the dry until barely mixed. That is, lumps are totally OK, just get it mixed together so there aren't huge pockets of flour around. (Please, please don't overbeat them.) Grease the muffin tin with butter and fill them 2/3-ish full of batter. Cook for about 20 mins, until a knife comes out clean. Eat them with abandon and lots of butter.
parboiling potato wedges (for 15 minutes) to have with not-dogs for lunch. <3 afterward they were baked at 425F slathered in olive oil, greek seasoning, cayenne pepper and panko breadcrumbs until they were deliciously crispy. 40 minutes at least, though time could probably be shortened with a few minute broil at the end, I was baking in a no-broil dish, so I couldn't. I just kept an eye on them until they looked might delicious and then popped the not-dogs & buns in for a few minutes. I pretty much cook by the seat of my pants.
