Cake Decorating Hints and Ideas




1) For hot and humid conditions: Add 1/4-cup of cornstarch to two pounds of powdered sugar to make your decorator's  Buttercream icing. This will keep the icing from softening too much keeping the integrity of your work and designs.


2) Don’t beat your icing too long or too fast: It may give you more volume...but it also gives you more air in the icing, in turn creating a problem getting your icing smooth.


3) Don’t use large pastry tips for decorating borders: It looks very unprofessional, gaudy, and uses too much icing. It not only costs you more money, BUT the customer will just scrape it off the cake and throw it away.


4) When making your own special colored icings; in which you have to use several colors to attain the desired shade, make more than you will need, as it is very difficult to match the first batch.


5) Use a damp sponge on the frosting to give you a textured appearance....have fun and experiment with different sponges!


6) For the elimination of back fatigue: try standing on a rubber mat...Don't have one?...use a well padded kitchen rug.
