Turkey Roulade
Cannot tell you how good this was. Deboned and butterflied a turkey breast, spread sausage stuffing (maple sweet pork and smoked chicken sausages, smoky dry cured bacon, pine nuts, whole grain bread, onion, celery and spices) on the inside, rolled and then tied like a roast. Butter, salt and pepper the outside then low roast the entire affair. When finished, slice like a jelly roll. Be sure to deglaze the roasting pan for the perfect gravy base. This recipe is one modified from Ina Gartner.
