Roasted Pork Belly with Fresh Corn and Apple-Pear Sauce Nathan Branch ©2011 A roasted pork belly with "cracklin'" -- i.e. the skin roasted at a high enough temperature so that it's crispy and chewy, but the meat is still moist. The meat comes from a local organic, free-range farm, plus fresh corn on the cob (organic) and apple sauce I made myself. ??? Popular sichuan dish Recipe: 1. Boil pork belly about ten min with cassia or cinnamon stick and 1 ts of sichuan pepercorns 2. Cut meat in thing slices 3. Cut leek and bell pepper 4. Stir-fry meat about half a min with chopped garlic, 1 ts of hoisin sauce and 1-2 ts of chili-bean sauce 5. Add vegetables and fry more about one minute on high fire Enjoy!
