Homemade Organic Vegetable Beef Soup Made with fresh, locally grown veggies and grass fed beef we got at the farmers market yesterday. For those who might want the recipe, I must warn you, it took me over an hour to cut and prepare all the vegetables, and then you have to let this soup slow cook for 8 hours if you want it done really right. So, this is an all-day process. Better start early if you want to have it for supper! Ingredients are: 1 lb. Stew beef cut into 1 inch pieces 6 cups organic low sodium beef broth 3 ears white sweet corn, cut off cob 1 cup chopped celery 2 cups chopped carrots 3 cups of chopped potatoes 1/2 cup finely sliced okra 1 cup yellow squash sliced into small pieces 2 cups of diced tomatoes 1 cup butter beans 1 cup green beans 3 cloves garlic finely chopped 3 cups cooked barley 5 teaspoons onion powder 1 can (15 oz.) tomato sauce 1 can (8oz.) tomato paste 1 Tbsp of sea salt 1/2 tsp fresh grated black pepper 1/2 tsp of basil 1/2 tsp thyme 1/2 tsp oregano 1/2 tsp rosemary 1/4 tsp allspice 4 bay leaves Directions: Put all ingredients in a large slow cooker. Pot will be fairly full! Cook on high for three hours, stirring every 20 minutes. Lower to low heat and let slow cook for 5 more hours, stirring occasionally. Note: Excellent when served with a wedge of good old Southern corn bread. Slow Cooker Yellow Split Pea Soup with Canadian Bacon Recipe
INGREDIENTS: 8 cups water 1 package (1 pound) dried yellow split peas, sorted and rinsed 3 medium carrots, diced (1 1/2 cups) 1 medium onion, chopped (1/2 cup) 1 medium stalk celery, chopped (1/2 cup) 1 cup diced Canadian-style bacon (5 ounces) 1 teaspoon salt 1 teaspoon dried thyme leaves 1/4 teaspoon dried rosemary leaves, crumbled 1/4 teaspoon pepper DIRECTIONS: 1. In 3 1/2- to 4-quart slow cooker, mix all ingredients. 2. Cover and cook on low heat setting 8 to 10 hours or until peas and vegetables are tender. 3. Place 2 cups of the soup in blender or food processor. Cover and blend on medium speed until smooth; pour into bowl. Repeat with 2 more cups soup. Stir all blended soup into soup in slow cooker.
