Fudge Pie

If the Gambill family has a traditional dessert, this be it. 

 4 eggs

2 C. sugar

3 squares unsweetened chocolate

1/2 C. butter or margarine

1 tsp. vanilla

1/2 tsp. salt

unbaked pie shell


Melt the butter and chocolate over low heat.  Remove from heat and add the sugar, then the eggs, vanilla and salt.

That's the official way.  My preference is to add the vanilla to the sugar and chocolate for I dearly love to nibble a little of that mixture.  Yum!  

Pour the mixture into the pie shell and bake in a 350 degree oven for about 40 minutes.  This is where it gets tricky.  What you want is for it to be set around the edges while jiggly in the middle.  If it's set in the middle when removed from the oven, it's overcooked.  OTOH, if it's too jiggly it'll be runny.  This is a total judgment call, and the fact is it takes practice.
