Oatmeal Cookies with A-Peel 1 cup sweetened dried cranberries (such as Craisins) or raisins 1/2 cup orange juice 1/2 cup granulated sugar 1/2 cup packed brown sugar 1/4 cup butter or stick margarine, softened 2 tablespoons light-colored corn syrup 1 large egg 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 3 cups regular oats 1/3 cup coarsely chopped walnuts 1 tablespoon grated orange rind Cooking spray Preheat oven to 375°. Combine cranberries and orange juice in a bowl; cover and let stand 10 minutes. Beat the sugars and butter at medium speed of a mixer until light and fluffy. Add corn syrup and egg; beat well. Stir in cranberry mixture. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, baking soda, baking powder, and salt in a bowl, stirring well with a whisk. Add the oats, walnuts, and orange rind; stir well. Add to sugar mixture; stir until well-blended. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 375° for 8 minutes or until almost set. Cool on a wire rack. a great sturdy cookie with more protein and fiber. Adapted from a King Arthur Flour recipe. BREAKFAST COOKIE It says 4 ? C add ins, but I think that it could easily handle more, I put in 5 C and it was note overly chunky. Makes 18-27 cookies ? C butter 1 C peanut butter ? C brown sugar 2 t vanilla ? C milk 2 T canola oil 1 2/3 C whole wheat flour ? t baking soda ? C dried milk 1 t cinnamon 1 t salt 4 ? C add ins of your choice: raisins, dried cranberries, dried fruit, nuts, oatmeal, barley flakes, granola chocolate chips, sunflower seeds, etc. Preheat the oven to 350 degrees. Greased or line with parchment paper two cookie sheets. In a large bowl, mix together the butter, peanut butter, brown sugar, and vanilla. Add the milk and oil. Mix in the flour, dried milk, baking soda, cinnamon and salt. Mix in the add ins until evenly distributed. Scoop about ? portions and place on the prepared sheets. Flatten slightly. bake for 18-22 minutes, until lightly browned—do not over bake. 18 minutes was perfect for mine. Cool for 5- 8 minutes on the cookie sheets and then move to a wire rack to cool completely.
