Chewy Breakfast Bars Our store's cooking director formulated this recipe, and we made it for a demo one weekend, and they were very good. Not super healthy--like I told my coworker Lynn, they are basically Rice Krispies Treats with higher nutrient density--but they do have fiber, and are gluten-free! (Mine were also vegan because I used the dairy-free chocolate chips, dairy-free natural butter-like spread from my store, and didn't use honey.) I also snuck some coconut oil in these because I didn't have the full 3/4 cup of nut butter. Next time, I will probably use all the nut butter it called for, but use coconut oil as the oil in this recipe. 7 cups puffed whole grain cereal (unsweetened) 3/4 cup dried cranberries 3/4 cup chocolate chips (or other dried fruit, like raisins or blueberries) 1 t ground cinnamon 3/4 cup brown rice syrup (or honey) 3/4 cup nut butter (peanut or almond are both good) 2 T butter/soy margarine/coconut oil 1. Stir together cereal*, dried fruit, and chocolate chips in large bowl. *NOTE: You may want to start with 6.5 cups of cereal, and only add more if the mixture seems too gooey. Otherwise the bars may not hold together correctly. At work, we made this without chocolate chips and the bars didn't seem to stick together very well with the stated amount of cereal. 2. Place syrup, nut butter, and oil in large, microwave-safe measuring cup. Microwave 1.5 minutes until hot and oil has melted. Add cinnamon. Stir well. 3. Pour over cereal mixture. Stir repeatedly until coated. 4. Dampen hands with cold water. Press cereal mixture firmly into greased baking pan (use a square one if you want thicker squares, or a long rectangle dish for thinner ones.) Rewet hands if necessary to keep hands from sticking. 5. Freeze 30 minutes. 6. Cut into 15 bars and store in the refrigerator. He's Cookin'!
