Beef and Radish Stew This beef stew was improvised with a little guidance from the Joy of Cooking. The idea was to use up some veggies and a beef roast that had sat in the fridge just a little longer than planned. Turned out fabulous! I love slow cooked meats! Here's the recipe. 1 tablespoon butter 2 medium yellow onions, sliced 1.5 lbs. beef, cubed 3 carrots, sliced 1/2 teaspoon dried thyme 1 teaspoon Worstershire Sauce 1 cup chicken stock 2 daikon, thickly sliced 2 cups water 1/2 cup pearl barley Salt and pepper Melt butter in the bottom of a slow cooker (I used the well on my XX stove). Add onions and saute until soft and clear. Add beef, chicken stock, carrots, thyme, and Worstershire. Cover and cook for about 45 minutes. Add daikon, water, barley and a generous shaking of black pepper. Stir to mix everything. Cover and cook another hour. Add salt and pepper to taste before serving. I've heard of this recipe for years and I just had to try it. It tastes like smokies in a tangy BBQ sauce. I was thrown a bit by the idea of adding grape jelly (which I despise) but it was really good! It would be a great addition to a party or get together.
