Hearty Italian Sandwhich Ingredients 1 1/2 pounds lean ground beef 1 1/2 pounds bulk Italian sausage 2 large onions, sliced 2 large yellow peppers, sliced 2 large sweet red peppers, sliced 1 teaspoon salt 1 teaspoon pepper 1/4 teaspoon crushed red pepper flakes 8 sandwich rolls, split shredded Monterey Jack cheese (optional) Directions 1.In a skillet, brown beef and sausage; drain. 2.Place a third of the onions and peppers in a slow cooker; top with half of the meat mixture. Repeat layers of vegetables and meat, then top with remaining vegetables. Sprinkle with salt, pepper and pepper flakes. Cover and cook on low for 6 hours or until vegetables are tender. 3.With a slotted spoon, serve about 1 cup of meat and vegetables on each roll. Top with cheese if desired. Use pan juices for dipping if desired. 4. Place in 350 degree oven for 10 to 15 minutes till the cheese is melted and roll is crispy. Night 2-BBQ Beef Sandwiches and Cole slaw
BBQ Beef Sandwiches 1/3rd of the beef roast cooked yesterday 1 bottle bbq sauce 6 hoagie rolls Add all ingredients except rolls into a slow cooker, set on low and allow to cook 8-10 hours or until done. As it cooks shred meat with a fork. Serve on hoagie rolls. Coleslaw 1 1/3 cups mayonnaise 3 tablespoons white vinegar 2 tablespoons plus 2 teaspoons granulated sugar 2 tablespoons milk dash salt 1 head chopped cabbage 1/2 cup shredded carrot Combine all ingredients except the cabbage and carrots in a large bowl and blend until smooth with an electric mixer. Add cabbage and carrots and toss well. Cover and chill overnight in the refrigerator.
