sunday breakfast I made biscuits, a super easy recipe from scratch and then fried an egg for hubby and bacon....kind of a biscuit sandwich but the biscuit was too thin to hold up to the egg tasted good biscuits 3 cups unbleached all purpose flour whisked with 3 tablespoons baking powder (also homemade cream of tarter mixed with baking soda) 3/4 t sea salt then put the dry ingredients into a large bowl, making a well in the middle and put about 3/4-1 cup dairy (I have used soy milk, almond milk, whipping cream, buttermilk half and half....it all works fine, but when soy or almond or half and half it takes a bit more liquid) in the well of dairy put 1/3 cup shortening and with your clean hand break the shortening up into little rice sized grains.....keeping the flour out of the mix.....once you have even sized small bits of fat in the liquid , slowly in a circular motion with one hand spin the well of liquid into the dry flour letting the flour adhere to the wet on its own....slowly you will get a ball of dough in the middle, all of the flour needs not be incorporated, but most will...the remains can be used to release a cutter or roller but you have two options either make the biscuits dropped (much easier and better) or you can roll it out gently and use a biscuit cutter.....messier for the dropped biscuits combine the dough ball into more of a log shape and break off a piece about palm of your hand size and with your clean hand pat the portion into a mound by tucking the ends under and place them on a greased cookie sheet if rolling put on a surface with the unused flour mixture and roll gently using the unused flour mix as your release flour makes 10 biscuite baked at 405 degrees for about 20 minutes....watch them they need to have the tray rotated to keep from getting unevenly cooked Cookies!
Bella and Amanda made cookies the other day. They made them from scratch with the easiest peanut butter cookie recipe. 1 cup peanut butter, 1 egg, 1 cup sugar. Mix. Bake at 350 (if they are all the same size) for 10-12 minutes or until done.
