That chopstick spear is a BIG help: You transfer the head to a colander in the sink as you peel off the leaves. When all the hamburger is used up, we saran-wrap the heart that's left after it cools completely, and keep it in the refrigerator. Then on Day 2 eating this (there is always a day 2 unless you're taking this to a potluck somewhere) we slice it up in wedges and put it in the pot to eat a more cabbage-y stew. I had my first experience handling cabbage recently, which I found fascinating. Remembering an article I had read, involving a South Korean baseball pitcher who wore a frozen cabbage leaf to keep cool during the game, I made Ryan test it out. Conclusion: It really works great (though don't try to wear it under your cap in a baseball game because as a "foreign object" on the field, it can get you ejected).
