Gobhi Parantha

Ingredients: For 6-8 flat breads  
  • ½ Cauliflower head washed and grated.
  • ¼ cups chopped coriander (cilantro) leaves.
  • 1/4 tsp black caraway seeds (kalonji).
  • 1/4 tsp carom seeds (ajwain).
  • 3-4 green chilies chopped finely.
  • 2 cups wheat flour.
  • Water
  • Salt to taste.

Method:

  1. Mix grated cauliflower, coriander leaves, green chilies, caraway and carom seeds.
  2. Sift flour and salt together.
  3. Knead the flour into dough with water (the dough should be as soft as your ear lobe).
  4. Take a small piece of dough and roll it out with a rolling pin, add 2-3 tbsp of cauliflower mix and then wrap the mix in dough.
  5. Dust the filled in dough ball with dry flour and roll it out. Fry the flattened bread with 2 tbsp of oil/butter on a heated skillet.
  6. Enjoy with yoghurt raita, pickles or tomato ketchup.
