Ingredients: For 6-8 flat breads
- ½ Cauliflower head washed and
grated.
- ¼ cups chopped coriander (cilantro)
leaves.
- 1/4 tsp black caraway seeds
(kalonji).
- 1/4 tsp carom seeds (ajwain).
- 3-4 green chilies chopped finely.
- 2 cups wheat flour.
- Water
- Salt to taste.
Method:
- Mix grated cauliflower, coriander leaves, green chilies,
caraway and carom seeds.
- Sift flour and salt together.
- Knead the flour into dough with water (the dough should be
as soft as your ear lobe).
- Take a small piece of dough and roll it out with a rolling
pin, add 2-3 tbsp of cauliflower mix and then wrap the mix in dough.
- Dust the filled in dough ball with dry flour and roll it
out. Fry the flattened bread with 2 tbsp of oil/butter on a heated skillet.
- Enjoy with yoghurt raita, pickles or tomato ketchup.
