We made a teriyaki duck donburi in lab class. Teriyaki is considered a roast or a grilled dish even thought he duck is typically pan-seared then braised in the teriyaki sauce. It is finally glazed with the reduced teriyaki sauce. Scallions or onions and a sweet-tasting sauce are typically thought to go very well with duckmeat as can be seen in the Chinese ''Roast Peking Duck'' dish and the French ''Duck a la Orange''. The same holds true for Japanese cuisine and here it is served with chopped scallions sauteed in duck-fat and stewed in a sweet teriyaki glaze. The duck is cooked to a rose doneness or medium-rare for best results. Topped with shredded scallions.
