February 23 2009 - Cooking In Cast Iron 54/365 Last night I tried out a new recipe for dinner - Spinach and Artichoke Mac and Cheese, courtesy of Rachael Ray. The dish was quite simple to make, and tasted good. It also gave me an excuse to use one of my cast iron pots - once the dish is assembled, you're supposed to bake it in a casserole dish. Instead of messing up an additional pot, I just made the sauce in a bigger cast iron pot, and then mixed the pasta in it. Once that was done, I threw it into the oven, and didn't have to worry about finding room in the dishwasher for another dish. Of course, I now have leftovers to last me for, oh, about a year. To peel a green plaintain, you're supposed to make two cuts about the same distance as what you see above. Then use the tip of a knife to carefully pry off that strip. Then if you bake it in a moderate oven for about 30 minutes, the sugars soften a bit and you can more easily peel the rest off. And this makes your house smell yummy. If you don't want to bake, it's best to make several close cuts along the fruit and peel it off in strips. Experts can figure out how to get it loosen enough to come off in one large piece. I just ended up hurting myself when I tried it. I can cook, but not gracefully.
