Ciccioli Frolli Crispy pork belly, chicory, apple, aged balsamic ($11) I can count on one hand how many "Western" preparations of roast pork/suckling pig have impressed me (and I've come across quite a number over the years). This version by Mercatto not only suprised, but was a complete delight and was a specific choice for the Lunch Pick (I had shared it on a previous occasion. Had to correct that wrong. :P ). Thin crisp (likely finished at order) scored skin shouldered a layer of creamy, smooth fat which sat like iceing over a tender layer of pork (likely slow cooked before this flash pan/salamander finish). The contrast of the unctuous protein to the ruffles of lightly dressed chicory and tart granny apple slices helped lighten the otherwise heavy course; that lightening/brightening sensation was echoed by the aged balsamic (and apples themselves) which cut through the fat. Excellently executed. Only quibble I have is that this time the pork belly wasn't heated all the way through (LOL, this is how I am sure it was premade then finished to order via salamander) vs. the first that just fell to the fork like it was bowing in submission.
