recipe from Vegan with a Vengeance 2 c all-purpose flour (I used half all-purp and half whole wheat as usual) 2 c rolled oats 2 tsp baking powder 1 tsp salt 3/4 c canola oil (I'll sub applesauce for at least part of this next time) 3/4 cup chunky all-natural peanut butter 1 c granulated sugar 1 c brown sugar 1/2 c vanilla soy milk 2 tsp vanilla extract Preheat oven to 350. Lightly grease two cookie sheets. In medium-sized bowl, toss together flour, oats, baking powder and salt. In a large bow, mix together oil, peanut butter, sugars, soy milk and vanilla. Add dry ingredients to wet and mix. Dough should be firm and moist. Portion out using 1/4 cup measure and roll into balls, flattening to 1/2" thickness. You can use a greased glass or plate to flatten them, but I just get my hands damp to roll them into a ball and then flatten with my palm. One less thing to wash after. =) Bake for 12-15 minutes and let cool 10 minutes before moving to a cooling rack. For normal sized cookies, use 1-2 Tbsp of dough and bake 8-10 minutes.

Refrigerate until firm enough to handle. Shape into 1-inch balls. Place on ungreased cookie sheet. Bake 10 minutes. About 4 dozen cookies.
