These are for my little boy. He has a lot of food allergies; egg is one of them (ironic, I know). Before he outgrew his wheat and milk allergy, I used a lot of Cherrybrook Kitchen products. Since then, I've tried soooo many cookie recipes from cookbooks and online resources but none of them worked. This is my own concoction, and yes, I added cake mix. What can I say, if it works, use it. I hope he outgrows his egg allergy in a few years. I can't wait to make him a normal chocolate chip cookie. Egg-Free Chocolate Chip Cookies 8 oz. bar cream cheese, softened to room temperature 1/2 cup (1 stick) butter, softened to room temperature 1 box white cake mix (I used Betty Crocker) 1/3 cup flour 1/8 tsp. salt 1 cup semi-sweet chocolate chips Preheat oven to 350 degrees. Mix together the cream cheese and butter until combined. Add the cake mix, flour, salt and chocolate chips. Use a cookie scoop to drop the cookie dough on to a baking sheet and space them about 2 inches apart. Push down the cookie dough so it's slightly flattened. Bake for 10 to 12 minutes or until golden brown around the edges. This recipe makes about 3 dozen cookies.

I was hesitant when making these because the only gluten-free-vegan cookie recipes I could find online had a number of ingredients that I didn't have on hand and didn't know where to find. I decided to mix and match and see what happends, and fortunately, these came out pretty well! I used brown rice flour, sweet rice flour, cornstach, soy flour, arrowroot starch, and agar-agar for the wheat flour substitutes and thickening agents. If you're on a gluten-free diet, I'll be happy to share the recipe! I've never had a gluten-free cookie before, but the texture in these were perfectly cookie-like! :)
