At this stage, it's been cooked on "high" for about two hours or so, and the vegetables still have texture. That is to say, they have some crunch to them, not hard crunch, but are somewhat "al dente," or "to the teeth." I don't much care for mushy, baby-food consistency vegetables. I'll turn it on "warm" overnight, and then up to "low" in the morning, if necessary to cook just a wee bit longer.
