Orange Oatmeal Cookies (w/recipe) Still in a baking mood apparently. =) These are pretty much a combo of a couple of recipes I came across and adjusted to fit what I had in the cabinet. Even with the whole wheat flour, these came out very light and fluffy and a little chewy. YUM! UPDATE: I sealed these up in a ziploc and they got a little sticky so... either store them in a not-so-airtight container or pop them into the toaster oven (seriously yummy!) if you don't like the stickiness. =) Orange Oatmeal Cookies makes 36 cookies 1 cup whole wheat flour 2 cups rolled oats 1/2 cup oat or wheat bran 1/4 cup soy flour 1 Tbsp baking powder 1 tsp baking soda 1 cup fresh orange juice 1/2 to 3/4 cup honey 2 tsp vanilla 1/2 cup to 1 cup raisins, nuts and/or chocolate chips (optional) Preheat oven to 350 degrees. Combine wet ingredients in large mixing bowl. Combine dry ingredients in smaller mixing bowl. Add dry ingredients to wet ingredients. Stir to combine. Drop by tablespoonfuls onto nonstick baking sheet (or line with parchment paper). bake for 12-15 min). Enjoy! Very Flexible Oatmeal Cookies
This is my first attempt at making cookies with no sugar cane. They are sweetened with honey and molasses. Ya know, I'm not even sure what molasses is. For all I know it's from sugar cane. Better check on that. The cookies were just OK .Not very sweet at all and I think I should've switched to the cookie paddle on my mixer. The oats and raisins were pulverized. All that being said they are all gone in under 24 hours..
