LEMON COOKIE RECIPE WITH CAKE MIX - PEANUT BUTTER COOKIES CHOCOLATE CHIPS - COOKIE MONSTER BEDDING. Lemon Cookie Recipe With Cake Mix
Eve's pudding First time trying this recipe. The recipe came out of a little book I have on baking. Traditional Eve's Pudding, I believe, has only apples. This recipe called for layers of apples & blackberries. Ingredients: (Serves 6) 1 lb. apples 1 generous cup blackberries 3-6 (depending how sweet you like it) tbsp. brown sugar zest of 1 lemon 1/2 cup caster sugar (if you don't have caster sugar, just pulverize regular sugar in a blender for a few seconds) 1/2 cup butter few drops of vanilla extract 1 cup self-rising flower For garnish: 1 tbsp. confectioner's sugar custard cream, to serve Preheat the oven to 350 F Greased a 1 quart casserole or small deep baking pan. Cover the bottom with a layer of sliced apples, then a layer of blackberries. Sprinkle blackberries with fresh lemon zest and brown sugar. Repeat the layering until all the fruit has been used up. Cream the butter and sugar in a separate bowl, until soft and fluffy. Beat in the vanilla extract and then the eggs, a little at a time, adding a spponful of flour after each addition. Fold in the extra flour with a metal spoon or rubber spatula and mix well. Spread the sponge mixture over the top of the fruit and level with the back of a spoon or a rubber spatula. Place the dish on a cookie sheet and bake for 35-40 minutes or until well risen and golden brown. To teast if the pudding is cooked, pres the cooked sponge cake lightly with a clean finger - if it springs back, the sponge is cooked. Dust with a little confectioners sugar and serve immediately with custard and cream. (I skipped that step) It was the tastiest thing I've baked. Next weekend: Chocolate saffron cheesecake. Leckerli
This is one of those Christmas cookies that has been around in my family for as long as I can remember. Our secret nickname for it is sidewalk cake because one year the dough was baked too long and it became too hard to cut, nevermind consume! So we threw it out onto the frozen lake for the birds to eat. They didn't touch it and it remained a little slab of sidewalk in the middle of the lake until spring thaw. Don't let that discourage you from making it, just be sure to not overbake! dough: 1/2 c sugar 1/2 c honey 1/2 c chopped candied fruit 2 1/2 c flour 1 1/2 tsp ground cloves 1 1/2 tsp ground nutmeg 1 tbs ground cinnamon 1/4 tsp salt 1 tsp baking soda grated rind of 1/2 lemon 1 cup chopped nuts 2 tsp orange juice glaze: juice of 1/2 lemon confectionery sugar Preheat oven to 325 degrees. Heat honey and sugar to boil. Add the rest of the ingredients. Add a little more OJ if mixture is too hard to combine. It's easiest to mix this with your hands once it cools off enough. Spread in a 9x11 pan lined with parchment paper. Bake for 20-25 minutes. When cool, make glaze: combine lemon juice and confectionery sugar to a consistency that is not too runny yet not too thick to spread. Spread over baked leckeri. Let sit at room temperature. When glaze has hardened, remove leckerli from pan and cut into diamond shapes by cutting diagonally one way first across the leckerli and then the opposite direction. YUM!
