Kitchen adventures
Into slow cooker: 6 yukon gold potatoes, 6 button mushrooms, half a white onion, 2 carrots (all chopped), 1 quart chicken stock, 4 teaspoons minced garlic, couple shakes of salt and pepper, a dash of red pepper flakes. Put on high for 4 hours (or low for 8 hours). In the last thirty minutes I mixed in half a cup of nonfat Greek yogurt and a splash of almond milk (don’t ask… I was just emptying my fridge at this point). I served it with a French baguette from my favorite bakery.
