Cheese souffle from Cooking for Two: 2009, published by America's Test Kitchen. Recipe calls for two 12-oz. ramekins. Not easy to find. I found 10-oz. ramekins at Replacements Limited in North Carolina. Then I found these 14-oz. ramekins at Bloomfield's near Hendersonville, N.C. Most important recommentation: do the mis en place, because otherwise you'll be doing some frantic multi-tasking. Next time I'll whip the egg whites longer and cook a little longer. The souffle originally stood up above the edge of the ramekins, but quickly lost some of it's altitude. It continued to fall even as I took pictures. I ended up selecting my first shot for that reason. This is not an insurmountable problem, and I look forward to trying again soon. I will leave out the parmesan cheese for Jim's serving, as he doesn't like the smell or taste. The mug and the little cream pitcher also came from Bloomfield's

The beautiful honey glaze on this mug really brings out the decorations created by my hand-carved stamps! This is a porcelain cup handmade on a potter's wheel and fired to over 2000 degrees F. It is decorated in a beautiful warm Tenmoku glaze that highlights the African textile inspired pattern. Comfortably balanced, it stands 4" tall with a 4" diameter base. It holds 14 oz, a little more than a standard commercial coffee mug.
