Essential Questions

  • If you are what you eat. . . what are you?
  • Can scientific knowledge make us better chefs?
  • What is food justice and what might it look like (locally and globally)?
  • How can we learn about the needs, wants, and tastes of others, and then design things that meet those needs, wants, and tastes?

In this project, students will study the history and culture of the foods they eat. They will survey our community to find out more about our tastes and desires. They will learn how to gather valid statistics and how to interpret statistics; they will learn the biology of food preparation processes; they will learn global geography as they trace the origins of various foods and how they went global.


In the end, they will enter into a "Shark Tank" competition where they will pitch their own food business to sell licorice, blue cheese or olives to China. They will create a dish that centers around one of these foods, and write a business plan explaining how their dish has been adapted to local taste and why their dish will be the foundation of a viable business. They will attempt to sell their dish to investors in a final competition.
