Gingerbread Cookie Recipe

Mrs. Swanke's Fabu Gingerbread Cookies

The week before Christmas students cut out and decorated Gingerbread Cookies with me during their library time. 
Since the cookies were very well received I am sharing my recipe.

Ingredients:
2 small boxes Jello Butterscotch pudding mix (cook and serve)
1 cup butter softened
1 cup brown sugar
2 eggs
3 cups flour
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon baking soda

Directions:
Preheat oven to 350 degrees.
Cream pudding mix, butter and brown sugar using a mixer (about 3 minutes on low speed)
Beat in egg.

In a separate bowl combine the flour, ginger, cinnamon and baking soda.

Add dry ingredients and mix until well blended. 
At this point the dough may be refrigerated (but it doesn't have to be.)

Roll out dough onto floured board and cut with cookie cutters.
Add decorations as desired (but not icing if you are planning to ice the cookies)

Bake at 350 degrees for 10 minutes and cool on baking sheet for 5 minutes befor removing to a cooling rack. Cookies may then be decorated with icing as desired.
