Stuffed white onions

Recipe of the Month
This recipe is from the book entitled Monet’s Garden. It is one of the prettiest books in my collection, as well as having simple authentic recipes which I love to try. Of course everything tastes better when you eat it in France, but that’s a much more expensive problem.

Ingredients
4 large white onions, peeled
1 cup ground cooked pork, chicken, or calf’s liver
2 tablespoons chopped chives
2 tablespoons Herbs de Provence
1/2 cup grated Gruyere cheese
1 hard boiled egg

Procedure
Cut a half inch slice off the top of the onions and blanch in boiling water. This is done by cooking them in a covered pot for 30 minutes. Then drain and carefully scoop out the center of each onion leaving about a 1/2 inch wall. Combine the ground pork with the chives, herbs, and half the grated cheese. Mash the hard-boiled egg yolk and chop the white and add to the meat mixture. Now stuff this mixture into the onion shells. Mound slightly above the top of the onion. Preheat oven to 350. Place the onions in a greased roasting pan and sprinkle the rest of the Gruyere cheese on top. Bake for 30 minutes or until cheese is lightly browned. This is a great side dish or can be served as a main with a nice rice pilaf.

Avocado Baked Eggs

Avocado baked eggs from the "Silver Palate" ladies of NYC. Sheila Lukins and Julee Rosso — two women who changed the concept of take-out food as best friends, and who now don't talk to each other. Oh well! Here's the recipe:

Ingredients
2 ripe plum tomatoes
1/4 teaspoon salt
2 tablespoons unsalted butter
4 thin slices baked ham
2 teaspoons freshly grated Parmesan cheese
1/2 ripe avocado peeled and cut into 1/2 inch pieces
2 tablespoons sour cream
4 eggs
Freshly ground black pepper
2 teaspoons chopped cilantro

Procedure
Slice the tomatoes into 1/4 inch slices and place on paper towels and sprinkle with salt. Let drain for 30 minutes. Preheat oven to 450. Bring a kettle of water to the boil.

Melt 1 tablespoon of butter in a sauté pan and sauté ham till lightly browned. Place 2 slices ham in the bottom of 2 oval ramekins 8x6x2 inches tall. Pat tomato slices dry and place over ham and sprinkle with parm. cheese. Scatter avocado pieces and dot with sour cream. Break 2 eggs in each ramekin. Sprinkle with black pepper and dot with remaining 1 tablespoon of butter. Sprinkle chopped cilantro on top. Place ramekins in baking dish and add boiling water to go up to 3/4 of the way up. Bake till eggs are milky white and yolks are set, about 12-14 minutes.

Eat immediately. Yum! Don't forget some good toasted bread for dipping.

Musicians have always lifted tunes from each other. Stravinsky borrowed from Tchaikovsky, who rearranged Mozart, who stole from Beethoven, who took local folk songs and made them his own, and on down the line.

Of course, these composers were always pretty creative when it came to thievery. Here are six recent(ish) pop songs that were either influenced by famous classical melodies, or sample actual tunes and use them in the fabric of the song. I leave it up to you to judge whether or not they do justice to the originals.

1. “Someone to Call My Lover”  by Janet Jackson

Stolen from:  Gymnopédie No. 1 by Erik Satie
More specifically:  Notice how the songwriters took the original tune in 3/4 and rejiggered it to fit the standard 4/4 beat of a pop song.
Fast Fact:  Janet Jackson is the only performer to be nominated for the Grammy in Pop, Rock, Dance, Rap and R&B.

 

2. “Road to Joy” by Bright Eyes

More specifically:  the “Ode to Joy” tune, based on the poem by German writer Friedrich Schiller. (Road/Ode, get it?) 
Fast Fact:  Beethoven wasn’t the only composer who went deaf. Here are 5 others you should know about.

 

3. “Symphony in X Major” by Xzibit

More specifically:  the first movement, entitled Allegro
Fast Fact:  Bach used his name as a musical theme in one of his greatest works, The Art of the Fugue. In the German system of notation, ‘B’ is Bb and ‘H’ is B natural, so he was able to use this tune: Bb, A, C, B.

 

4. “Coming 2 America” by Ludacris

September 12, 2008 - McCoy Tyner was born on Dec. 11, 1938, and grew up in a Philadelphia neighborhood with Richie Powell and Bud Powell as neighbors. They were among his early musical influences, as were Thelonious Monk and Art Tatum.

Tyner began playing at age 13, and took to the piano quickly. By the time he reached high school, he had begun playing in venues around Philadelphia and nearby cities. His first big gig came in 1959 when he joined the Benny Golson-Art Farmer Jazztet. In 1960, saxophonist John Coltrane, who had recently left the Miles Davis group, invited Tyner to join his new quartet. Tyner played with Coltrane's quartet for about five years, and his unique approach to the piano helped to define the modal style for which that group became famous. The quartet gained international acclaim and is recognized as one of the most important and influential groups in the history of modern jazz.

After Tyner left Coltrane in 1965 he went on to play with his own trio. Eventually, he worked as a sideman with Jimmy Witherspoon, and with Ike and Tina Turner, and he continued to make his own recordings as a leader, something he began doing while still in Coltrane's group. It wasn't until Tyner signed with Milestone Records in 1972 that he began achieving individual recognition, eventually becoming known as one of the all-time jazz greats in his own right.

Tyner recorded with various labels over the next two decades, including Blue Note, but eventually found a home label with Telarc in the late 1990s. His 2007 recording, McCoy Tyner Quartet, features Joe Lovano, Christian McBride, and Jeff "Tain" Watts.
