Stuffed white onions

Recipe of the Month
This recipe is from the book entitled Monet’s Garden. It is one of the prettiest books in my collection, as well as having simple authentic recipes which I love to try. Of course everything tastes better when you eat it in France, but that’s a much more expensive problem.

Ingredients
4 large white onions, peeled
1 cup ground cooked pork, chicken, or calf’s liver
2 tablespoons chopped chives
2 tablespoons Herbs de Provence
1/2 cup grated Gruyere cheese
1 hard boiled egg

Procedure
Cut a half inch slice off the top of the onions and blanch in boiling water. This is done by cooking them in a covered pot for 30 minutes. Then drain and carefully scoop out the center of each onion leaving about a 1/2 inch wall. Combine the ground pork with the chives, herbs, and half the grated cheese. Mash the hard-boiled egg yolk and chop the white and add to the meat mixture. Now stuff this mixture into the onion shells. Mound slightly above the top of the onion. Preheat oven to 350. Place the onions in a greased roasting pan and sprinkle the rest of the Gruyere cheese on top. Bake for 30 minutes or until cheese is lightly browned. This is a great side dish or can be served as a main with a nice rice pilaf.

Avocado Baked Eggs

Avocado baked eggs from the "Silver Palate" ladies of NYC. Sheila Lukins and Julee Rosso — two women who changed the concept of take-out food as best friends, and who now don't talk to each other. Oh well! Here's the recipe:

Ingredients
2 ripe plum tomatoes
1/4 teaspoon salt
2 tablespoons unsalted butter
4 thin slices baked ham
2 teaspoons freshly grated Parmesan cheese
1/2 ripe avocado peeled and cut into 1/2 inch pieces
2 tablespoons sour cream
4 eggs
Freshly ground black pepper
2 teaspoons chopped cilantro

Procedure
Slice the tomatoes into 1/4 inch slices and place on paper towels and sprinkle with salt. Let drain for 30 minutes. Preheat oven to 450. Bring a kettle of water to the boil.

Melt 1 tablespoon of butter in a sauté pan and sauté ham till lightly browned. Place 2 slices ham in the bottom of 2 oval ramekins 8x6x2 inches tall. Pat tomato slices dry and place over ham and sprinkle with parm. cheese. Scatter avocado pieces and dot with sour cream. Break 2 eggs in each ramekin. Sprinkle with black pepper and dot with remaining 1 tablespoon of butter. Sprinkle chopped cilantro on top. Place ramekins in baking dish and add boiling water to go up to 3/4 of the way up. Bake till eggs are milky white and yolks are set, about 12-14 minutes.

Eat immediately. Yum! Don't forget some good toasted bread for dipping.

A Newsletter for Friends of KSFR - Volume One - Issue Three (June 2009)

The Birthday Bash was a Blast:  Sunday, May 17, 2009 at the Scottish Rite Temple proved to be an in-cred-i-ble event!  200 people helped celebrate the birthdays of not one - but two - wonderful Santa Fe Treasures.  Arlen Asher (The Jazz Experience) and "Bumble Bee" Bob Weil.  The event was also a fundraiser for The Outpost in Albuquerque, headed by Tom Guralnick.
 
Arlen is an "jewel" in the world of music and the state of New Mexico.  Image the stage filled with Arlen and his instruments - (for this party Arlen brought only three instruments).  Typically he will share the stage with his B-flat clarinet, bass clarinet, every known kind of saxophone, concert flute, alto flute, bass flute, and contrabass clarinet.  As Mark Acuff (New Mexico Independent - 1975) described Arlen "merely the best mutliple-instrument woodwind jazz player in the country today, in our humble estimation".  That opinion has not changed!  In October 2008, Arlen received the "Mayor's Recognition Award for Excellence in the Arts".  Arlen moved to Albuquerque in 1958 and has played with many bands and taught a few thousand students in New Mexico ever since.  And now each Tuesday morning on KSFR - 9:00am - you will listen to and feel the music that Arlen brings to the airwaves.   
 
Bumble Bee has been a jazz promoter for twenty-five years here in Santa Fe.  He has brought countless musicians to Santa Fe; including Wynton Marsalis.  Bumble Bee is a key contributor in the world of Jazz - hosting our very own John Trentacosta every Saturday night at Bumble Bee's Cafe and Grill - 301 Jefferson (see below under "What's Happening").  Bumble Bee is integral to the New Mexico Jazz scene.  He heads the Santa Fe Jazz Foundation which helps to sponsor independent Jazz Programs and The New Mexico Jazz Festival (held each year during the last two weeks of July). 
 
So many musicians were there to honor Arlen and Bumble Bee; providing the finest music in town.  Musicians who entertained everyone at the celebration included:

About one month ago, Bari Lovewave (Camp Lovewave) was listening to an interview between Bob and his guest Melissa Moore, the owner of "One of One" - a new arts gallery near the Railyard.  A few weeks later Bari made a visit to "One of One" and - Bari's pottery is now on display. Bari says: "See what listening to KSFR can bring about?  For me, it was a great opportunity to hear about a business venture that I would never have imagined."

Native American Radio:  After 17 years on the air, Albert Raymond Cata has retired from his Saturday, 3pm show Native American Radio, effective May 30th.  Albert is a traditional Native American Storyteller from Ohkay Owingeh (formally known as the San Juan Pueblo).  He has participated in a project for PBS Television and also worked with Sunset Productions.  Albert will be busy working with many groups and proposing a show to NPR.  Much luck to you, Albert, and many thanks for your dedication and support of KSFR Public Radio

Introducing . . . . . .  a new Indigenous program, hosted by Tara Gatewood (Isleta Pueblo & Navajo), debuts on Saturday, June 6th at 3:00pm.  Tara has more than a decade of experience in the world of communication.  She has worked as a broadcaster, newspaper reporter, photographer and documentarian across our country. Tara currently is a part of the national radio show "Native America Calling" and heads up Intu Media.
 
Regarding her new program, Tara states: "Where our music is the FOUNDATION of any conversation.  Lending an ear to the Indigenous music that shapes our world through thoughts, words and sounds.  A take on the music Natives are making, listening and connecting to which includes the beats on traditional, contemporary, independent, and mainstream music as well as, personal reflections by Native musicians, actors, artists and the boys and girls next door who love those Indigenous beats."  Welcome, Tara!

KSFR BOARD UPDATE:  Nick Falcone is the newest member of the KSFR Board of Directors, having been elected to the Board on May 14th.  Nick is a retired attorney, a former Ventura County (California) Public Defender.  Nick and his wife Colleen relocated to Santa Fe in 2006.  You most likely met Nick and his wife at the Pre-Fund Drive Party at Museum Hill Cafe, or in the Fund Drive phone room.  Welcome Nick!
 
Stan Spiegel has been a member of the KSFR Board for the last six years, from almost the start of KSFR, as we know it.  Through the years, Stan has contributed greatly to the success and growth of our Station.  At the end of June, Stan's tenure on the Board will end due to term limitations.  We thank him for all his dedication and support.
